Ingredients:
2 lb lean deer meat
4 strips fatback
2 med onions
1 tbsp black pepper
1 tsp salt
1 tsp red pepper
1 lb rice
1 pinch ground sage

Cook (parboil) deer meat 3 hours. Fry fatback and onions in a pan until brown. Add deer and simmer. Add salt, pepper, and sage. Cook 2 1/2 hours then add rice. Continue cooking until rice is tender.
