Duck Fry Appetizer   (download pdf)
6 duck breast.
2 sticks of butter.
1  can of beer.
2 teaspoons of lemon juice.
1 white onion.
Flour and Cajon Seasoning of choice.

Cut duck breast into bite size pieces.

Melt butter  then add beer once it comes to a boil add lemon juice and let cool.

Pour butter melt over cut up duck breast in a pan then place in refrigerator over night.

When ready to cook place pan with duck meat in over at 180 degrees just hot enough to melt butter.

Heat vegetable oil in deep frying pan on high ( drop a little flour in oil if it bubbles its ready)

Mix flour and Cajon batter together ( 50/50 or if you want more taste use  more Cajon batter) 

Remove duck breast from butter melt and place in a zip lock bag with batter in side mix half the meat in batter and place in frying pan until golden brown. Cut onion in small pieces and place over duck meat.

Use toothpicks to put in the duck meat and serve.
